Carrots are a good source of fibre, with significant amounts of vitamin B3 and C. They are also extremely rich in beta-carotene (pro-vitamin A).

Carrots also contain calcium, potassium, sodium, zinc and iron.

Like many vegetables, carrots are best eaten raw.

Steamed or boiled carrots are a wonderful addition to any dish. Include them in your slow cooker or grated carrots makes a tasty addition to any salad or sandwich.
